Yeast is a living organism, and when you wake it up properly, it’s what gives bread that beautiful rise and airy texture we all love. All you need is warm water (100–110°F / 37–43°C) and a pinch of sugar to get it bubbling and alive. If it foams within 5–10 minutes—you’re good to go! If not, it’s time to start fresh.

I grew up watching my mother, grandmothers, aunts and grandfather (in his spirit) knead dough by hand, their stories and traditions baked into every loaf. Now, as a 3rd generation baker, I’m sharing those same multi-generational heritage recipes with you.

Baking bread may seem intimidating, but at its heart it’s about transforming simple ingredients—flour, water, yeast, and salt—into something warm, nourishing, and delicious.
If you’ve ever wanted to bake bread from scratch but didn’t know where to start—this post is for you! Season 2, Ep. 9

Ravanija has always been one of my favorite desserts!!!!!
It’s simple, comforting, and timeless — and now, it’s yours to try at home 💛

It’s quite the traditional Macedonian dessert with roots to the centuries of assimilated life under the Ottoman Empire.
This soft, syrup-soaked semolina cake was passed down from my mum - the original recipe was handwritten and measured with a soup spoon 🥹✨ & That’s how you know it’s an old classic.

🍰 Ingredients for the batter:
• 4 eggs
• 210g sugar
• 160g EVOO
• 225g milk
• 190g semolina flour
• 160g all-purpose flour
• ½ tbsp baking powder
• 1–2 tbsp vanilla powder

For the sherbet (syrup):
• 335g sugar (~1.5 cups)
• 3 cups water
• ½ lemon juice
• 1 tbsp vanilla powder

🔪 Execution Steps:
1. Whisk eggs and sugar until light and fluffy.
2. Add EVOO, then milk, and continue adding ingredients as listed.
3. Transfer batter into an oiled baking pan. Baking pan: 3.8Qt or 13.5x8.5in or 34x23cm
4. Bake at 390°F (200°C) for 10 min, then reduce to 350°F (175°C) and bake for another 15 min.
5. Let the ravanija cool completely.

🫗 To make the sherbet (syrup):
1. Combine sugar, water, lemon juice, and vanilla powder in a saucepan.
2. Bring to a boil and simmer for 10 minutes.
3. Let the syrup cool before slowly pouring it over the cooled cake.

Cover ravanija and refrigerate overnight to allow it to fully absorb the syrup.

The next day, decorate with shredded coconut, chopped walnuts, or chocolate flakes if desired!

🎬 Season 2, Episode 7: On The Menu Today

We’re serving a beloved comfort dish straight from the Macedonian kitchen: Moussaka – Balkan style 🇲🇰✨

This was definitively one of my favorite dishes to eat growing up and it was a pretty common option on our weekly menu. As an adult I very much enjoy cooking it and it’s perfect for any family table.
It is very simple to make by layering thinly sliced potatoes (or eggplant), spiced ground meat, and finished with a silky egg mixture. It’s 3 layers of potatoes with a layers of ground beef in between.

Bake at 425°F (220°C) for about 1 hour.

Pour the egg mixture on top 10–15 minutes before it’s done to get that signature crispy, golden-brown finish. 🥔🍳✨

This dish goes well with any of my bread recipes on my blog, especially focaccia! If you want to take it up a notch, make a Gabbage Salad 🥬

*Chefs tip: prior to baking check to make sure that you have enough liquid in your pan to steam onto the potatoes. The total liquid in the baking pan should be covering about 1/2 of the potato layers. If needed add couple tablespoons of water however if your dish already has tomatoes consider that as well. You don’t want your musaka to be too watery 💁🏼‍♀️
