Grandpa's Artisan Bakery Rolls: Step-by-Step Recipe (Dinner Yeast Rolls)

These traditional soft, fluffy, and pliable bakery rolls are a cherished recipe passed down through generations, originating from my grandfather, who began baking them almost a hundred years ago in a small kitchen filled with the warm, comforting aromas of freshly baked bread. His dedication to perfecting this recipe over the years has made it a beloved staple in our family, evoking memories of joyful gatherings and shared meals. Baking these dinner yeast rolls is straightforward, requiring only a few basic ingredients and patience until the dough rises to achieve its signature lightness. Whether you are baking them for a family dinner, a festive occasion, or a celebration, these dinner bread rolls will impress and satisfy anyone's taste buds.

Ingredients:

1 kg bread flour

550 ml milk plus some extra water for dough development*

*(If the dough doesn’t feel enough hydrated because some flours could absorb more liquid than others)

21 g instant yeast (31.5 g active dry yeast)

1.5 tbsp sugar

1 egg

2 tbsp oil* + 1/2 stick (~50g) unsalted butter at room temp

~1/2 tbsp Himalayan Salt (I always eyeball it)



Execution Steps:

  1. Combine yeast, milk, and sugar. Allow it to rest for a while.

  2. Gradually add flour while mixing the dough. As a dough begins to form, continue kneading until your hands tire. Allow the dough to rest for its first rise, about 40 minutes.

  3. Punch the dough, reshape it, and let it rise again for 40 minutes.

  4. Following the second rise, move the dough to a floured work surface and begin cutting sections, shaping each into a tight ball or roll. As you form them, place them in the pan.

  5. Brush rolls with beaten eggs. Allow rolls to rise for 20-30 minutes.

    Optional: sesame seeds, with a sprinkle of salt and brown sugar

  6. Bake at 220°C or 425°F for 15-20 minutes until golden brown, depending on the size and shape of your rolls.
